Summary

This warm, vegetarian stroganoff is one of our coziest and most satisfying dishes. For this preparation, we’ve used a mix of crimini, white button, and portobello mushrooms, but you can substitute your favorite specialty mushrooms as well.

Ingredients
  2 tbsps. extra virgin olive oil
  1 ½ cups organic crimini mushrooms, sliced
  1 ½ cups organic white button mushrooms, sliced
  1 ½ cups cups organic portobello mushrooms, sliced
  2 cups organic yellow onion, sliced
  ½ tsps. organic paprika
  ¼ tsps. organic fresh thyme
  tsps. organic whole mustard seeds
  2 pinches organic black pepper
  ½ tsps. salt
  2 tbsps. organic white wine
  ¾ cups organic sour cream
  2 tsps. organic Italian parsley, chopped

Heat the olive oil over medium-high in a large pan.

Add onions, mushrooms, thyme, and spices to the pan and sauté for 5 minutes.

Deglaze the pan with the white wine. Reduce the heat to low.

Add sour cream and cook 3 minutes.

Garnish with parsley and serve warm over rice or the grain of your choosing.
