Good Earth Cheesy Mashed White Beans & Kale

cups organic navy beans, cooked

tbsps. organic sunflower oil

tbsp. organic garlic, minced

cups organic half and half
1
cup organic cheddar, shredded

pinch salt

pinch organic pepper

cups organic kale, de-stemmed and chopped

tbsp. organic lemon juice

cups organic parmesan

organic green onions, sliced

Heat half of the sunflower oil over medium in a medium-sized pot.

Add garlic and sauté for 1 Minute.

Add beans, half and half, and 2/3 c of water to the pot. Bring to a simmer.

Turn off heat and puree the bean mixture. Add cheddar, salt, and pepper and mix to combine.

In a separate pan, heat up the other half of the oil. Sauté kale over high heat for 5 Minutes.

Turn off heat and add lemon juice to the kale. Mix kale with bean mixture.

Top with scallions and parmesan and serve warm.
